What you'll never see on the Coast
I have always had a weakness for the cane field roads (except during the annual burnings, of course).  There is no rush like jumping on your electra glide in blue and cranking your wrist up high, speeding down a long straight cane field road, hair flying and sweet scent lingering on the breeze.  Ya Mon!
A side trip I would HIGHLY recommend to complete any
visit to Jamaica is a stop at Cranbrook Botannical Gardens,
on the north side, inland from Dunn's River Falls.  With trails
through primeval forest and more flowers and colors than
you knew existed, the place is like a visit to the Amazon
or Congo, without the shots required first.
Ancient buildings still dot the countryside all over Jamaica, some three hundred years old (and there's no admission
to go inside).

Old estates and plantations can be toured, some for a fee and some for the price of an afternoon chat.  Some are abandoned, help yourself!
When taking hikes in the hillsides of the interior, one may stumble upon all sorts of interesting flora!

These are the sorts of sights you can expect to see if you drive across Jamaica through the interior, for instance, between Saint
Ann's and Kingston
near Newcastle, in the Blue Mountains, where the government training compound is located
In Mandeville, a great place to cool off for a day trip and great restaraunts
